• Protein >22%, preferably >24%
• Fat <5%, preferably <4%, more preferably <3%
• Protein-to-fat ratio >5, preferably >6 or even higher
• Ideally, white/pale varieties (but brown or other colors is not directly a no go, as we will dehull them in the process)
