Exceptional pepper, exceptional flavor! Penja pepper has an incomparable flavor: robust, it is a pepper with a wild character, with a pronounced spiciness, a tangy heat and a good length in the mouth. It has woody, amber and musky notes. For those who only moderately appreciate the spiciness, go easy on the dose. Like all the peppers resulting from the liana piper negrum, we find the green pepper, black, red and white which are all different. For information, the green pepper sold here is a fresh pepper and not dried: - If you buy our white pepper from Penja, you should know that it is the red pepper from Penja, like the red pepper from Pondicherry, which is the fully ripened pepper that is cleaned and therefore we keep only the heart. We enclose the pepper in huge burlap bags, which we put in tubs, which we fill with spring water from the same volcanic soil where it grows. It is left to soak for 10 days without any additives, changing the water regularly. This particular water source makes Penja pepper naturally white once it dries. At this point, the retting stage begins, which has never changed: the pepper is trampled every day by the men and women of the plantation in order to remove the pericarp that envelops the pepper. Once this step is completed, the pepper is taken out of the bags. The pepper is spread out on huge cloths and left to dry naturally for a week. Once dry, the women calibrate the pepper with special sieves. Only the 'big' grains are kept, these are the survivors who will be the white pepper of Penja. In terms of flavor, Penja white pepper is less spicy, more subtle and milder than Penja black pepper. Chunky, pungent and powerful but without tearing, it has the woody, amber and musky nuances of its kind. Its fragrance is delicate, warm, round and long in the mouth. - If you buy our fresh green Penja pepper: be aware that it is the Penja pepper harvested before maturity. It is harvested in bunches and then very quickly packaged in a salt brine in order to preserve all its fragrance and flavors. In terms of flavors, the fresh green pepper of Penja remains very powerful. It has floral nuances that reminds of apple blossoms. Powerful, rich, it finishes smoothly with woody flavors and freshly cut herbs. It can be kept for several months in the freezer, otherwise, like all berries, it should be consumed within a week.
